Sweet Potato Chili crockpot recipe

Ya’ll this is my favorite fall, 30 days to healthy living friendly, recipe. It is easy to make for dinner one night or as a meal prep to have leftovers! It is sweet and savory all at once and nice and warming on a cold night.
Ingredients:
Cumin
Bay leaves
Chili powder
Onion
Sweet potato
Rotel diced tomatoes
Ground meat (I prefer beef or bison but you could also do turkey)
Garlic
Beef broth
Water
Instructions:
1. Chop the sweet potato into cubes and place in the crockpot on low covered with beef stock
2. In a really big saucepan heat a drizzle of oil followed by the onion and garlic. Sweat until fragrant.
3. Once the garlic and onion is fragrant put the meat into the pan and cook until lightly browned. Stir in the Rotel tomatoes, bay leaves, cumin, and chili powder.
4. When the meet is fully cooked remove pan from heat and pour meat and seasoning mixture into the crockpot over the sweet potatoes.
5. Add water to create a soupier chili (optional)
6. Let cook on low until the sweet potatoes are cooked through (5 hours or so).
And that's it! Super simple and seriously delicious!! Add a little Avocado to the top during the 30 days or a light sprinkle of cheese if you aren't cleansing!!
